I’m still pretty new to coding and was wondering if I can use the sdk on Xcode for Mac because it has a simulator.

The Playdate SDK is self-contained.
Xcode is not a requirement.
You should be able to use it on your Mac.
Have a read of Inside Playdate and start off by running the examples that are included with the SDK.
